Winemaking
Aged in 225-liter French oak barrels for an average of 22 months. Bottled in 37.5 cl format.
 
Tasting Notes
 
Appearance: Dark amber in color; brilliant and luminous.
 
Nose: Initially very powerful, with bottle reduction notes that fortunately dissipate with air. There is a slight balsamic hint, reminiscent of rosemary honey, which intermingles with lacquer, seasoned wood, and fine cabinetry. It opens rapidly to reveal a more approachable profile: aged woods, burnt egg yolk (yema quemada), candied quince, caramelized sugar, and glaseé fruit, with touches of bitter orange marmalade.
 
Palate: It features a very intense bitter and botrytized character. The texture is beautiful—unctuous (graso) and concentrated—with bitter notes of candied orange and honey, supported by very good acidity. The finish is smoky and honeyed, exceptionally long. A complex and impressive Sauternes, comme il faut!
