Winemaking
Traditional white wine vinification for both varietals, without skin contact. During fermentation, the process is halted (mutage) by adding pure alcohol to the liquid phase. Residual sugar stands at 110 g/l. The wine was aged for 22 years (264 months) in old oak tuns to induce oxidation. Throughout this extensive aging, the wine undergoes an annual evaporation of 7% (part des anges), resulting in a loss of approximately two-thirds of its total volume. Bottled in 1999 and cellared at the winery for several years prior to its commercial release.

Tasting Notes
Appearance: Dark amber; clean, with golden and orange highlights and a pronounced sense of viscosity.
Nose:
Striking and honest, fully expressive with an immense concentration of
dried fruits: raisins, dried apricots, Turkish figs, and quince paste.
Subtle vegetal notes emerge, reminiscent of orange peel and cigar
tobacco leaves, joined by a sweet and finely spiced backdrop of vanilla,
cinnamon, nutmeg, and clove, alongside hints of café au lait and
toffee. Its true dimension is revealed after several hours of aeration,
showing the profile of a great vin rancio. It displays the character of an old solera,
with notes of wine-soaked staves, honeycomb, oriental spices, incense,
and sharp, pungent nuances. Elegant, deep, and replete with high-quality
details.
Palate: The initial impression is slightly sweet, reminiscent of a traditional Fondillón
from Alicante, faithfully mirroring the aromatic profile. Soft, deep,
and complex, it features a citrus acidity and elegant bitters (orange
marmalade, cocoa) that perfectly counter the traditional rancio
oxidative character. Savory and persistent with a spiced finish and an
acidity that lingers indefinitely. Remarkably consistent with the 1978
cuvée. A magnificent wine to be savored slowly; it improves day by day
as it breathes. Superb.

Founded in 1895 by Michel Cazes, Domaine Cazes
has evolved from a small family estate into a benchmark for Roussillon
viticulture. Currently managed by Bernard Cazes and his son Emmanuel,
under the direction of Lionel Lavail, the winery oversees a diverse
portfolio of 15 different labels across various appellations, including Côtes Catalanes, Côtes du Roussillon, and Rivesaltes.
A
pivotal shift occurred in 1997 when the estate moved away from
large-scale commercial production to focus on environmental harmony.
Today, its 220 hectares represent the largest certified organic and biodynamic vineyard in France. This philosophy extends to their newer estates, Canet des Hospices and Domaine du Mas de Lavail.
