Winemaking:
Selection of grapes from various plots in Rioja Alta near Ollauri and from small local producers linked to the winery since the beginning of the century. The wine remains for 12 to 18 months in large wooden vats from the founding era until fermentations are complete. It matured primarily in used 225-liter American oak barrels, and other volumes, for 48 to 60 months. Subjected to periodic manual rackings. Minimum of 3 years of bottle aging in the winery’s old cellars before commercial release.
 
Tasting Notes
 
Appearance: Reddish-ruby color with medium depth; clear, brilliant, translucent, and extremely clean. Radiant with garnet and amber reflections. Very low sense of thickness. Broad, tile-colored rim.
 
Nose: A model 1973, textbook style. It reveals a full array of aromas—elegant and lush, full of notes of leaf litter, wine-soaked wood, damp earth, fungi, chestnut husks, and truffle. A non-stop spectacle. Intense and broad, maintaining a high level throughout. It evokes an autumnal landscape with a mineral background of flint and gunpowder that adds a misty pigment to the ensemble. Slightly "funky" (apestosillo) but of great quality. This does not interfere with the presence of reduced red fruit, very ripe and quince-like, framed by fine woods, cigar boxes, and tobacco filler. A true Paternina!
 
Palate: Perhaps less voluptuous than the nose suggests, but it maintains tension and fluidity. Agile, silky, fresh, clean, and refined. Less jammy and sapid than expected, but with a level of refinement that commands admiration. It is by no means an austere wine; quite the opposite. It transcends its appearance of fragility, sip after sip, inviting another.
 
Commentary:
This is a classic Paternina of the highest order, capturing the soul of Ollauri and the elegance of the 1973 vintage. A wine that stays true to its identity.
