Winemaking
Young wine subjected to oxidative aging for 25 years in American oak barrels. The grapes undergo a raisining process before being pressed using hydraulic systems. A naturally sweet must is obtained; following partial fermentation, high-quality rectified wine alcohol is added. The wine rests for at least one year in stainless steel tanks for natural decantation, as its high density precludes filtration.

Tasting Notes (2012-09-17)
Appearance: Very dark and opaque; high depth with an iodized rim.
Nose: It presents as very poised featuring notes of toasted and caramelized nuances, alongside raisined fruit (Turkish figs, macerated plums, dates).
Palate:
Nearly medium-bodied, showing less concentration than most Cordoban PX
wines. Remarkably mature, savory, balanced, and smooth—replete with
spices. It is exceptionally easy to drink without sacrificing any
complexity. A great product from Toro Albalá; the years in bottle have
benefited it significantly.

Tasting Notes (2004-12-20)
Appearance: Opaque black with tiny reddish iridescence in the meniscus. Mahogany rim with iodized notes and old gold highlights.
Nose: Medium intensity; elegant toasted notes, licorice, date pit, roasted nuances, toffee, and burnt sugar.
Palate:
Subtle and elegant. It shows a curious lack of density, with flavors of
fig jam, dates, caramel, and hints of dried apricots and nuts.
Reminiscences of liqueur and bitter cocoa emerge. It has a good flow on
the palate—savory, with a finish featuring high-quality bitter notes and
spices from the wood. Extremely long; spectacular and eternal
retronasal passage.
