Winemaking
To preserve the wine's natural residual sugars, fermentation was arrested by fortifying with wine alcohol. It underwent 17 years of aging in oak casks. Limited production of 8,000 bottles.
 
Tasting Notes
 
Appearance: Light amber in color with orange and iodized highlights.
 
Nose: Exceptionally clean and of medium intensity. It reveals notes of wine-soaked wood, smoky hints, candied fruit aromas, icing sugar, and a subtle brushstroke of nuts.
 
Palate: Remarkably rounded and silken, featuring old solera nuances. It is slightly off-dry on the entry, with flavors of raisins, dried apricots, and Dakhla dates. It requires some time to aerate, becoming increasingly savory and intense. The balance between acidity and sweetness is surprising. A highly personal and distinctive vintage Oloroso. It will be necessary to wait for the release of the 1992 vintage to establish a point of comparison.
